This is the coffee we used for The World Barista Championship 2019 in Boston.
Unique is indeed what you think about this coffee and in the very best meaning of the word. Distinct flavours of cinnamon, apple and baked cherries.
El Diamante is fermented for 25 days in a closed steel tank where it has been fermenting with the most spicy leftover mucilage from the revolving coffee farms.
The anaerobic fermentation process boosts the intensity of the flavour.
Roasted for espresso.
